What's the standing for Oracles by the Temple and/or Gwidre? I don't recall anything related to that on Universe.
Is it considered heresy? It is a tradition?
Also, I haven't found any Ogham or Miracles related to future-seeing and divinations. Is that on purpose?

Only the authors can say whether it's on purpose or not 
But if you want to create seers characters, you can imagine "insight" ogham, or divination miracles, even though the powers of these spells might be too strong.
IMO, predicting the future has always been a problem in role-playing game, because no one can ever know what's gonna happen except the Game Leader, so even if a player rolls a divination throw, he must never know the result until he sees whether it happened or not, depending on the result.

We use mostly "signs" for demorthèn or the Temple (they interpretate events as the will of the Spirits or the Unique)

In our recent session, the players found a tarish merchant in gwidre that had to sacrifice his son due to a seer's omen, or risk losing everything he had. That was the plot for the whole session.
